Abstract

The conflict in Syria had its epigenesist in 2011, and in the year of 2016, the country faces a civil war, which caused a displacement of a million of Syrians from their country. Based on statistics of Refugees National Committee, the Brazil host approximately 1600 Syrian citizens, and Brazil became the main refugee destination, especially São Paulo. In spite of the difficulty that Syrian refugees are having after arriving in Brazil, the adaptation of some of them in the country seems to be based in Syrian culinary, which can be observed in the big number of published material in the media that show Syrians refugees rebuilding their life in São Paulo by means of food. The present study intends to understand the processes of acculturation of eating practices of the Syrians refugees that live in São Paulo, by means of understanding possible changes in preparations that are served in their Syrian food employments or changes in cooking classes and changes that are happening in their food habits. It will be realized a qualitative research, with semi-structured interviews and participant observation and no participant observation. It will be realized an exploratory content analysis and the identification of the themes will be done by the "cutting and sorting" approach, using a codebook. The software MAXQDA will aid the analysis. Subsequently, treatment of results, inference and interpretation will be made, which will allow the interpretation and description of dynamics involved in possible changes in food habits of the refugees and possible changes happening in their employments.
