Optimization of the parameters of enzymatic hydrolysis of food waste and alcoholic fermentation by S. cerevisiae for the production of ethanol fuel

Abstract

Currently there is a grand interest in renewable energy sources and low environmental impact, due to the increase in energy demand and the socio-environmental problems arising from current energy sources. Biomasses in general, such as food waste, represent an alternative energy source with significant potential to complement the world's energy matrix and high availability of material, about 1.6 billion tons of food are wasted annually worldwide. In addition to biofuel, organic wastes present potential application in biotechnological processes in the production of other molecules. In this point, the goal of this project will be to characterize the chemical composition of the University's food waste before and after hydrolysis, to optimize the enzymatic hydrolysis process by means of an experimental design (24, 36, 48 hours) and temperature (50, 55 and 60 °C) using crude amylolytic extract and the scaling of the enzymatic hydrolysis (0.5 L) to obtain a syrup with high glucose concentration. In addition, from the hydrolyzate, batch alcoholic fermentation tests will be performed using the Saccharomyces cerevisiae M-26 yeast to determine the influence of nutrient addition on the must and glucose concentration in the fermentation medium. The results will be submitted to Tukey-ANOVA statistical analysis.
