Abstract

In this project, we propose to develop a spectroscopic tool to monitor the in situ and ex situ release of food additives. Recent findings have shown that certain classes of chelating agents can encapsulate food additives, controlling their release during industrial production. We will use the spectroscopic properties of rare earth cations doped in these chelating agents to monitor the controlled release of these additives. The main goal is to correlate the spectroscopic properties of the non-chelated versus the chelated cations, which could provide a valuable method for the monitoring and control of processes of industrial and scientific interest.
