Abstract

Food is an important link in the epidemiological chain of food borne diseases. Inappropriate handling and poor conservation of food favor the multiplication of pathogens that can lead to food borne disease in their consumers. Meat of different origins (bovine, pork, and poultry) are part of the meal and are commonly involved in outbreaks of food poisoning. Thus, due to the scarcity of information about the quality of meat and its handling, in Botucatu city, 70 samples of meat (pieces or ground) of different origins (bovine, pork, and poultry) and their products (kafta, kibe, flovoured meats) will be analyzed according to the Collegiate Board Resolution N° 12 (CBR, ANVISA, 2001), in order to establish their hygienic sanitary conditions, using indicators such as thermotolerant coliforms and sulfite reducing clostridia and the search for pathogens such as Salmonella. Staphylococcus aureus will also be investigated due to the manipulation of this type of food, although it is not microbiological standard in the CBR. S aureus strains will be screened for the presence of some genes enconding enterotoxin and if these genes are being expressed, by RPLA tests. The same strains will also be submitted to biofilm production. The results will be passed on to the owners of the commercial establishments.
