Abstract This project aims at exploring organized structures formed by mixtures of lipids or fatty acids, such as coconut oil, and natural polyelectrolytes such as chitosan, though not restricted to these components, to obtain responsive systems for biomedical or food applications. Structural characterization involving techniques such as light and X-ray scattering is envisioned accompanied by investigation on incorporation and release of active compounds, including the possibility of in-vivo experiments, with control by external triggers such as temperature, pH, ionic strength or others. | |
