Utilization of layered compounds for intercalation and encapsulation of natural Apocarotenoids

Abstract

Bixin and norbixin are apocarotenoids and the main components of annatto dye. Such compounds show applications as bactericidal, fungicidal and anticancer agent, antioxidant and radical scavenging activity; however, these compounds present low stability under mild conditions due to their photosensitivity and reactivity towards reactive species found in the air. An approach to enhance the chemical stability consists in intercalate annatto dyes into layered materials such as layered double hydroxides (LDH) and layered hydroxide salts (LHS), or yet encapsulate them inside Pickering Emulsions stabilized by the same layered materials already mentioned. The characterization of apocarotenoids dyes and both layered materials, composed of Zn(II) and Al(III) will be performed by X-ray powder diffraction, UV-vis electronic spectroscopy, infrared and Raman vibrational spectroscopies, solid state nuclear magnetic resonance of 13C and 27Al, thermogravimetric analysis coupled to mass spectrometry, chemical elemental analysis, contact angle measurement, particle size and zeta potential. The emulsions will be visually characterized through an optical microscopy aiming to obtain average particle size and dispersion by means of image treatment. (AU)
