Abstract Pork is an important source of animal protein, ranking second in the list of the most consumed meats in the world. However, intensive animal production technology allows the emergence of infectious diseases. The use of probiotic microorganisms and their antimicrobial compounds, such as bacteriocins, has been considered an efficient alternative in the prevention and treatment of bacterial infections in the context of animal production. In this context, the present plan of activities aims to carry out the bioprospecting of bacteriocinogenic lactic acid bacteria (LAB) present in the intestinal microbiota of swine (Sus scrofa domesticus) and to evaluate the antimicrobial effect of these bacteriocins against pathogenic microorganisms of importance for pig farming. The results of this study will help find new probiotic LAB that are safe to use in animal feed and effective bacteriocins that can be used to fight off pathogenic bacteria. | |
