Abstract

The food supplement based on Euterpe edulis Mart., AnthocyanOx®, is a product of vegetable origin developed by Atina - Ativos Naturais (Pouso Alegre - MG), a standardized extract with the anthocyanins present in the fruit of E. edulis palm tree, popularly known as palmito-juçara or juçara, which grows only in the Atlantic Forest located in the coastal region of Brazil and can be cultivated for exploitation of edible palm heart. The species E. edulis is known to have an antioxidant concentration five times higher than Euterpe oleracea Mart (Açai), a palm tree endemic to the Amazon rainforest and known in Brazil as a "superfood". Considering the antioxidant and marketing potential of the product AnthocyanOx®, this work aims to develop a method to obtain silver nanoparticles containing food supplement based on E. edulis (AnthocyanOx®), through the green synthesis nanotechnology. It also aims to characterize the nanoparticles and evaluate the antioxidant activity through in vitro tests of free radical scavenging DPPH, of the Fe+3 ion (FRAP), of the ABTS radical and lipid peroxidation (TBARS), as well as the antiglycation activity, by the method of protein mobility in electrophoresis and determination of free amino group. It will also determine the content of phenols, flavonoids and total anthocyanins in silver nanoparticles containing E. edulis-based food supplement.
