Abstract

This research project aims to assess the combined toxicity of mycotoxins and heavy metals potentially present in infant foods, such as formulas, cereals, and fruit purees. Focusing on in vitro models, the study will employ cell cultures representing various organs, including kidney, intestine, blood, and liver, to evaluate the impact of co-exposure on human health. Methodologies will be optimized for mycotoxin and inorganic contaminant assessment, with a particular emphasis on the bioaccessible fractions. The project includes the analysis of commercially available infant foods in Brazil and France, targeting contaminants such as aflatoxins, deoxynivalenol, arsenic, and aluminum. The studies will explore the combined effects of specific mycotoxins and heavy metals by using a dedicated software, initially developed for drugs, to determine the type of interaction (antagonistic, additive or synergistic). Findings will be disseminated through scientific articles, conference presentations, and knowledge transfer workshops, contributing to the enhancement of national food safety initiatives. This project addresses a critical knowledge gap regarding co-exposure in infant foods and holds significant implications for public health and safety.
