Abstract

A search for a better perspective on life and well-being has been growing due to the main problem of the XXI century, depression and anxiety. However, to achieve this, a set of habits is necessary, and one of the most important is good nutrition. Currently, there is high demand for probiotics and prebiotics, being that the frist former involves beneficial bacteria for the intestinal tract and animal and human health, and the second they are fibers that, when used, increase the number of probiotic bacteria, among other scientifically proven benefits. In addition to these, there is a new category of study called "biotics," which are the postbiotics, These have shaping functions and inhibit pathogens in the intestinal tract, such as Salmonella sp, they consist of metabolites of lactic bacteria, obtained from the supernatant liquid after centrifugation of cells from probiotic bacteria cultures, such as those from the genera Bifidobacterium and Lactobacillus. The purpose of the project is to produce different types of Bifidobacterium breve postbiotics from MRS culture medium formulations (De Man, Rogosa, and Sharpe, 1960) and new formulations that are more economical and organoleptically acceptable compared to the traditional MRS médium, this will be done through the cultivation of B. breve. The postbiotics of B. breve will be selected based on the best growth, production of organic acids, and organoleptic characteristics (flavor and aroma). In a second stage, tests will be conducted to evaluate the inhibition of the pathogenic bacterium Salmonella enterica subsp. enterica serovar Typhimurium ATCC 14028, based on the Minimum Inhibitory Concentration (MIC) of the Bifidobacterium breve postbiotic (PB) BB-03 Danisco (Madison, USA). These tests will involve "in vitro" cultivation of the pathogenic bacterium in Brilliant Green (BG) medium in the presence and absence of the postbiotic (PB) in different proportions. The lowest concentration of PB for total inhibition of the pathogen will be used for formulation tests of a functional animal feed containing the postbiotic (PB) for potential future "in vivo" tests to demonstrate its effects on the intestinal microbiota and, if possible, to prevent or control certain diseases. Additional tests containing PB and feed will be conducted in the presence of Salmonella Typhimurium to verify the "in vitro" effectiveness of the formulated PB in the feed.
