Abstract

The aim of this project is to produce scientific information on food, metabolism and the environmental impact of food production. Health and the environment are the topics of greatest interest among young people and people with a high level of education; and among the elderly, health is one of the priority topics[1]. Thus, based on topics that are relevant to the general public, research carried out by CEPID Redoxoma will be presented. Some recent results are the implications of calorie-restricted diets and high-fat diets. Calorie restriction "reprograms" the metabolism, bringing positive[2] and negative[3] consequences.
