Abstract

The Dietary Guidelines for the Brazilian Population - ("Guia Alimentar para a População Brasileira" - GAPB), is an official document produced by the Ministry of Health that establishes dietary guidelines for all people. The University Extension project Panela Aberta - "Panela" - began in 2018, is part of the themes of Health and Education, and is anchored in two official guiding documents: the GAPB and the Reference Framework for Food and Nutrition Education for Public Policies. By the year 2024, Panela has already served more than 3 thousand people, mostly university students and health professionals. The proposal that defines the key concept of the project is Food and Nutrition Education ("Educação Alimentar e Nutricional" -EAN), as an area of knowledge and continuous and permanent, transdisciplinary, intersectoral and multi professional practice, which seeks to value and promote the autonomous and voluntary practice of healthy eating habits, and the Human Right to Adequate and Healthy Food. Among the various audiences to be served with the activities of the Panela Project are the food handlers of Solidarity Kitchens - ("Cozinhas Solidárias" - CSs). Based on the diagnosis foreseen in the main project that will compose the profile of the CS teams, this dissertation project intends to adapt the protocol of the Panela Project to the needs and previous knowledge of the collaborators about the Nova classification. Key informants will be interviewed on the following knowledge domains: 1) culinary ingredients; 2) classification of foods according to their degree of processing. The understanding of the employees' PanelaOpen Pot Project, which consists of workshops with the themes: 1. "Nova Classification", and 2. "Overcoming the Obstacles to Healthy Eating". This dissertation will contribute to the construction of the educational matrix foreseen in the main project.
