Abstract

The prediction of quality parameters through spectroscopic techniques and chemometrics in foodis an increasingly prominent field, offering a promising alternative for obtaining chemical insightsthat were previously only achievable through traditional methods. The primary advantage lies inconducting analyses that are precise, rapid, and waste-free. Studies comparing traditional methodswith alternative approaches have demonstrated that chemometrics combined with Near Infrared(NIR) spectroscopy has significant potential for application in various fields, including foodscience, technology, and engineering. While many studies focus on predicting major compoundsrather than parameters related to various food properties, such as amino acid bioaccessibility andcytotoxicity, some research has shown potential applications in these areas. Therefore, the doctoralproject, along with this research internship abroad (BEPE) proposal, aims to construct and validatepredictive models for amino acid bioaccessibility and cytotoxicity parameters in normal cells. Theinternship, which has been outlined since the submission of the doctoral scholarship, is afundamental stage of the project and will provide significant professional development in the fieldof chemometrics. It will also open doors for future collaborations and contribute to the ongoinginvestigation in this area.
