Abstract

Food composition data (CD) are essential elements for the implementation of actions in the areas of nutrition, health and education, agriculture, industry and food marketing. This data is available on CD tables, printed or online, and concentrates information on the chemical composition (CC) of a country's food. The creation of the Latin American Food Composition Portal (LATINFOODS Portal) aims to provide information on CC data on foods in Latin American countries, in a harmonized way, encouraging the production of regional CC data (ingredients, preparations and processed foods) from the countries that are part of the Latin American Food Composition Network (LATINFOODS, Spanish acronym), usually consumed by the regional population. For the creation of the Portal, protocols will be developed for the harmonization of CC data from the countries that make up the LATINFOODS network. To this end, it will be necessary to prepare Manuals and Forms, in addition to the execution of training workshops for compilers from the countries that make up the LATINFOODS network (training in compilation and aggregation of CC data and estimation of CC of preparations). This proposal is a continuation of the ongoing process (FAPESP Process 2023/04561-9) and the results so far include: (i) construction of the administrative area and website of the LATINFOODS Portal (https://www.latinfoodsportal.net/); (ii) preparation of the Manual and Form for the Compilation of CA Data; (iii) holding a workshop for compilers from the countries of the LATINFOODS network for the Compilation of CC Data; (iv) preparation of the Manual and Form for Aggregation of CC data; and, (v) preparation of the Manual and Form for the Estimation of the Chemical Composition of Preparations. The next steps involve: (i) validation of the CC Data Aggregation Forms; (ii) conducting workshops for compilers from the countries of the LATINFOODS network for Aggregation of AC Data and Estimation of CC of preparations; (iii) preparation of the database of the countries of the LATINFOODS network (ingredients, preparations and processed foods); (iv) training of the chapters for the use of the administrative area of the LATINFOODS Portal. Currently, 6 countries, in addition to Brazil, participate in this proposal, but it is expected that more Latin American countries will join the project, participating in all stages of implementation, in order to provide quality food CC information in a harmonized way, a demand of FAO/INFOODS.
