Abstract

The student will monitor the activities related to the study, which involve finishing the animals (Experiment 1 - 2025), slaughter, sample collection, carcass evaluations, and laboratory analysis of meat samples. In addition to monitoring the activities of Experiment 1, the fellow will develop analyses related to the expression of Calpains I and II, by immunodetection zymography, as well as the degradation of Desmin and Troponin T. Based on data obtained from a routine feedlot, including daily feed management, weighing, and slaughter monitoring, as well as sample collection and the methodologies used for meat quality assessments.
