Abstract

Beans are very important to the alimentation, especially at some conuntries, like Brazil, where the main protein vegetal is the beans. The bigger problem of beans are their deterioration, that occur in the seeds after maturation, in the same way, without our with the harvest. The research have the aim verify the alterations in beans grains with storage with different packages. Physical-chemical and sensorial analysis will be done.
