Abstract We shall explore the detailed consequence of deconfinement in collapsing supernona cores and their aftermath. The following topics will be addresses during this stage: a) non-equilibrium process in hot and dense matter, with emphasis in neutrino production and detectability on earth detectors; b) the onset of phase transitions and their dynamics related to combustion modes; c) signatures of exotic matter inside dense stars.
