Abstract

Processing by application of isostatic high pressure is constantly growing as a method of preserving food with minimal loss of quality. Processed food processed by isostatic high pressure maintains most of its nutritional qualities, in addition to having prolonged shelf life. In addition to the isostatic high pressure process, pressure assisted thermal sterilization technology has been studied and is an emerging preservation method for low acidity food products as a promising alternative to conventional thermal sterilization. However, selection of appropriate packaging materials for these emerging technologies becomes extremely important as processing may cause visual changes and the physical-chemical and mechanical properties of materials that may compromise the shelf life and safety of processed foods by high isostatic pressure. Some studies have evaluated the effect of this technology on the properties and on the potential of migration and diffusion in some multilayer composite packages, but still little explored. In this context, an important and relevant issue for industrial applications is to know the possible effects of low and high temperature high pressure processing parameters on the structure and morphology of materials, which in turn can determine the relevant effects on the mechanical properties, barrier properties, thermal properties, migration potential and diffusion.
