Abstract
Little is known about the phenotypic characteristics and physical-chemical properties caused by the different genotypes in the milk produced and what may have led to the choice between alleles A1 and A2 for dairy cattle. There are also no reports to date on the performance of microbial proteases in milk produced by animals with the A2A2 genotype. The scientific community still does not fully agree on the benefits of consumption of A2 milk compared to A1, and considering the new demands of the consumer market, which are increasingly related to the quality of nutrients, especially protein and fat, and to the the identification and quantification of BCM-7 will pave the way for this demand and will serve as a basis for other studies in the area. The present project aims to evaluate the protein and proteome profile of milk with contrasting genotypes for the ²-casein gene and to verify the proteolytic action of Bacillus cereus ss and Pseudomonas fluorescens and technological treatments applied to milk on BCM-7 production.
