Abstract

In Brazil, the cultivation of shiitake (Lentinula edodes) has grown considerably because it is an activity that uses agricultural wastes, such as sawdust, to make the substrate for mushroom production. Taking into account the long time for the growth of a tree to the point of harvest, the present project seeks to develop technologies for the cultivation of shiitake in straw, since they have an extremely short cycle in relation to the cycle of trees. Another positive point refers to the reduction of the production cost, through the pasteurization of the substrate, which will reduce the technological level of investment of the grower, mainly in relation to the acquisition of large autoclaves, boilers and laminar flow chambers. Thus, this project will be divided into 3 stages. The first will consist of standardizing the quality of the inoculum, using two strains subjected to growth in seven different inoculum formulations. The second will consist in adapting the use of straws, which will be grown in an axenic manner, with two strains and five different substrate formulations. Finally, the third stage will be identical to the second, the only difference referring to the sanitary treatment of straws, which will be pasteurized. Variables related to i) substrate characteristics, ii) agronomic behavior and final quality of the mushrooms, and iii) economic viability of the process will be evaluated. The results will be submitted to analysis of variance and the means compared by the Tukey test, under the level of 5% of significance. (AU)
