Application of nanotechnology for the development of new antimicrobial coatings based on plant-based compounds for post-harvest conservation of fruits and vegetables

Abstract

In just a few decades, Brazil went from being a food importer to one of the main producers and exporters. It is currently the third world producer of fruits and self-sufficient in the production of vegetables. Problems in post-harvest conservation and microbial contamination are identified as important issues not only for exporting, but also for the domestic market. The pandemic caused by SARS-CoV-2 has brought to the world a greater concern about the supply and preservation of food, and its consumption within what is considered a safe food - without microbial contamination. Edible coatings are alternatives for post-harvest preservation, with low cost, with antimicrobial actions, generally focused on phytopathogenic fungi. Nanotechnology can be an important ally in this situation, being able to collaborate with the conservation and preservation of food, in a sustainable way, prolonging the shelf life and inhibiting microbial contamination such as fungi, bacteria and viruses. For this purpose, plant-based organic particles will be evaluated in edible coatings (nano and conventional) with essential oils (EOs) for post-harvest conservation with antimicrobial activity (fungi, bacteria and viruses). Potential actives for coatings and essential oils (EOs) in different combinations will be analyzed for physical properties characterizing the materials with laboratory tests carried out to verify the antimicrobial activity through in vitro tests for phytopathogenic fungi, and for bacteria and viruses pathogens to man. In this way, the objective is to advance with the technology of coatings with antimicrobial actions, through the use of nanotechnology to preserve and guarantee a safe food with antimicrobial control of greater spectrum.
