Abstract

It is proposed the development of a mathematical model for the pasteurization of liquid food using plate heat exchangers, targeting the determination of the complete temperature distribution of the product and the evaluation of the process effect. The objective of this simulation tool is to support the project and design of continuous pasteurization processes. Sensorial and nutritional quality losses are thus avoided, as well as unnecessary costs with heating and cooling, originated from the over-processing (typical of pasteurization units because of the simplified assumptions considered for their design). The model will be experimentally validated for the HTST pasteurization of bovine milk through residence time distribution tests for all process steps (heating, cooling, regeneration and retention), as well as pasteurization tests with chemical indicators (enzymes alkaline phosphatase and lactoperoxidase) for evaluating the effect of the process on the product. Experimental and simulation results are to be confronted for minimization of deviations and model adjustment. (AU)
