Incidence of Aspergillus section Nigri producing fumonisin and ochratoxin A in foods and its significance on consumer health

Abstract

Knowledge about toxigenic fungi distribution in foods is of real importance because it can give parameters for control and prevention of fungal toxins. Most research on fumonisin producing fungi has concentrated on reports of the incidence of the Fusarium species, mainly Fusarium verticilloides, while that for ochratoxin A producing fungi, in warm climates, has focused on species of Aspergillus section Circumdati and Nigri. The objective of the present work is to verify the presence of Aspergillus section Nigri producing fumonisina and ochratoxin A in foods in which the presence of these species has been common, as well the presence of these toxins in these products. It will also be verified in which conditions these species produce fumonisin and ochratoxin in foods and also the molecular variability of these isolates. (AU)
