Films of starch as treatment post-harvest of cassava (Manihot esculenta)

Abstract

The cassava roots are a great energy source, where they are also presents cyanogenic compounds, that offer risks to the health in case of inadequate processing. The cassava roots can be used for table consumption or in an industrial way. The objective of that research is to validate a technology to avoid the enzymatic darkening, physiologic deterioration and to provide increase of the life of shelf processed minimally. The cassava roots (Manihot esculenta Crantz) of the variety IAC 576-70, will be supplied by the Center of Roots and Tubérculos of the Agronomic Institute of Campinas - IAC. It will be used 1000 roots, in 10 treatments with 4 repetitions (containing 3 roots in house repetition) in 9 times of storages. The treatments will be: Control with and without packing to vacuous, it cures with and without packing to vacuous, The coated product was analyzed for mass loss, pH, soluble solid, total acidity, ashes, fiber, starch, sugar total and reducers, color, texture, cooking time and microbiological contamination The statistical method will be entirely maybe to it in factorial outline with 10 treatments and 9 times of storage. The times of storage will be appraised through the regression, the comparisons among averages of the treatments with Tukey to the 5% and the mass loss also analyzed with repeated measures in the time, and with the procedure MIXED of the Statistics program used it will be the SAS version 8.1.
