Abstract

Brazil is one of the world's largest producers of cassava (Manihot esculenta Crantz), being the second largest source of starch after corn, and the most internationally traded. The sweet and wild cassava varieties are the most consumed, differing in starch content. Biodegradable packaging such as edible cassava starch based coatings added with active substances, can be used for coating fruits. However, the quantification of these compounds, their influence on the properties and digestibility of the coatings, and on the quality of coated fruits, require tedious and destructive analytical methods. Therefore, this project focuses on evaluating the potential of Near-Infrared Spectroscopy (NIRS) and hyperspectral imaging in the near-infrared region (NIR-HSI), combined with machine learning methods, to classify cassava varieties, quality assessment and monitoring of the processing of cassava starch-based products. It is noteworthy that both are innovative, fast and accurate techniques, which allow the evaluation of chemical compounds in food remotely, without destroying the sample and without generating residues.
