Effect of temperament and stress in the animal performance, blood parameters and the meat quality traits of beef cattle finished in feedlot

Abstract

Given the growing concern about animal welfare and the relationship of this behavioral trait with production efficiency, the objective with this research project to evaluate the effect of temperament and stress of cattle intended for cutting, feedlot with respect to: the productive and qualitative aspects of meat; to possible losses in the beef production chain, and identifying parameters that assist in identifying aspects of temperament that are favorable for the formation of commercial flocks for the court. The trial will be held in São Paulo Agency for Agribusiness Technology - APTA - Pólo Alta Mogiana, located in Colina/SP, which will be used 60 Nellore animals purchased from commercial flocks in the region and submitted to the system in feedlot finishing. Will evaluate the parameters: initial weight; concentrations of cortisol, insulin, creatine kinase, lactate dehydrogenase, haptoglobin, ceruloplasmin and IgA, temperament, by a score of trunk and output speed; final body weight , score of lesions, hot carcass weight, pH, area of ribeye, fat thickness, marbling, shear force, color, chemical composition, lipid oxidation, fatty acid profile, ability to retain water in meat, microbial evaluation, total weight gain, average daily weight gain. Will be used to analysis of variance considering the model of repeated measures in independent groups and test for the assessment of Goodman contrasts between treatments.
