Carcass traits and meat quality in response suplementation of the lambs under different leaf area indexes

Abstract

The trial will be carried in FCAV/Unesp, Jaboticabal, SP. Will be used 32 crossbred Santa Inês lambs, males, finished in different rates of leaf area and supplemented at 0 and 0.7% of body weight. The animals will be created in the Forage Section, slaughtered and determination of carcass traits will be held in the Goat's Departament when the animals reached 32 kg bodyweight. The parameters of meat quality will be determined in the Laboratory of Technology of Animal Products from the Department of Technology. Will evaluate the nutritional characteristics of meat, chemical composition, cholesterol and fatty acid profile, the physical-chemical, lipid oxidation, shear force, cooking loss, drip loss and meat holding capacity, the structural collagen, fragmentation index myofibrillar and identification of muscle fiber and sensory analysis of meat. It was used a completely randomized with factorial arrangement of 4 x 2 (4 LAI (0.8, 1.4, 2.0 and 2.6) x 2 (0 and 0.7% liveweight supplementation )). The data will be subjected to analysis of variance and regression and the means compared by Tukey's test at 5% significance level. A statistical analysis will use the SAS (2001). (AU)
