Abstract

The quality of agrifood product as well as the attributes that defines it, have been developed for decades (the 1950s to early 2000s), where discussions around the topic turned to issues related to standardization attributes and compliance with specifications as well as issues related to food security. In tradition the theoretical schools studying the subject turn exclusively to the models of production systems where productivity in the production and distribution on a global scale are the guiding food production. Today comes a greater demand for products coming from a model that counteracts the global model where underline specific product quality characteristics such as production and local consumption, embeddedness, connection between producer and consumer. Discussions about the quality of products in this new production and consumption model (agrifood short chains) is recent and needs a theoretical and practical deepening, in view of the new demands of consumers for these products and the need of farmers in their most of the family farm, to serve them. Thus, the challenge of this research project is to identify, among the rating for short-chain (face to face, spatial proximity, extended spatiality) by Renting, Marsden and Bank (2003), the variables (or attributes) that make up the concept of product quality in consumer perception. For that will be used for analysis of descriptive data analysis tools and exploratory factor analysis and confirmatory. (AU)
