Enzymatic synthesis of dietary triglycerides employing Airlift, fixed bed and fluidized bed reactors


One of the major challenges in the food industry is the modification of oils and fats aiming to obtain structured lipids, especially dietary triglycerides, which have important nutraceutical and food applications. MLM dietary triglycerides contain medium chain fatty acids (M) at the sn-1 and sn-3 positions and long chain fatty acids (L) at the sn-2 position, and can be obtained by enzymatic acidolysis of vegetable oils with medium chain fatty acids using 1.3 specific lipases. The present project aims to synthesize MLM-type dietary triglycerides by enzymatic acidolysis of grape seed oil with medium chain fatty acid (capric, C10) in Airlift, fixed and fluidized bed reactor using lipase from Rhizopus Oryzae, immobilized in low cost support, namely corn cob powder. Initially, the reactor will be characterized with respect to hydrodynamics. Lipase will be immobilized on corn cob powder using the covalent bond. The resulting immobilized system will be used in enzymatic acidolysis reactions in fixed, fluidized and Airlift reactors, in batch. The performance of the reactors will be evaluated based on the incorporation degree obtained and the one that provides the highest will be operated in continuous, for evaluation of operational stability. The results obtained in this research will allow the selection of the most efficient reaction conditions to obtain these MLM dietary triglycerides, being a promising project in biotechnology. (AU)
