Abstract

This project aim to develop, characterize and apply a bienzimatic biosensors prepared by modifying a polycrystalline Au electrode with a self-assembly monolayer of mercaptopropionic acid and mercaptoundecanoic acid. This monolayer will be further modified by glucose oxidase, fructose dehydrogenase enzymes and tetrathiafulvalene adsorption, for the electrochemical determination of sugars (glucose and fructose) in dietetic foods. The determinations using the enzymes modified electrodes will be made by chronoamperometric method, using the electrochemical oxidation of an espeficic mediator (tetrathiafulvalene for glucose oxidase and 3,4-dihydroxibenzaldehide for the fructose dehydrogenase enzymes, respectively) whose oxidation state is changed by the individual action of the enzymatic in its specific substrate. The electrochemical determinations (by square wave voltammetric) of the mediators will yield an electroanalytical method to the used for sugar determination in dietetic foods. The influence of some possible contaminants in these matrices will be also analyzed. (AU)
