Abstract

ABSTRACTCoffee is rich in bioactive substances and it is among the major contributors to the antioxidants ingestion in several countries. Roasting grade of grains and the method of brewing are extremely important for its antioxidant action. Studies indicate that the moderate consumption of this beverage is involved in the prevention of chronic diseases not transmissible, which are usually associated, constitute serious problems of Public Health and they are cause of premature deaths in adults. However, literature presents no consensus about the beneficial effects of coffee in prevention of these diseases and its components involved in these effects. This study aims at verifying the effect of filtered coffee (light and dark roasting), decaffeinated and expresso coffees on the lipid profile, glycemia and arterial blood pressure of healthy individuals after 4 and 8 weeks. Moreover, it aims to quantify the total phenolic compounds of coffee. Eighty healthy individuals, between 20 and 80 years old, will be selected after answer a questionnaire and make tests which will show their health: physical, nutritional, blood, urine, HOLTER-MAP and exercise test. Data will be analyzed by Statistica software, version 7. The paired test T of Fisher will be applied. ANOVA will be used in case of more than one moment (before and after the coffee ingestion), for comparisons intra-group. Categorical variables will be analyzed by chi-square. The non paired Test T of Fisher will be applied for comparisons between groups. Tukey test will be used for comparisons of more than one group of analysis. In the case of variables that do not have a behavior like normal curve, the tests of Wilcoxon, for the two groups, and the Kruskal-Wallis, for more than two groups of comparison, shall be realized.
