Abstract

Quality and preservation of dehydrated fruits depend on some factors, as properties and characteristics of the raw material, temperature and humidity airflow, model of dryer construction, etc. Nowadays, these expensive processes cause problems to the environment, without taking in account the importance of waste products generated in its transformation. This project presents the drying of peels banana as one alternative to prevent its waste fruits and making possible your use in the food production, in industries of biodiesel and extraction of pectin. Forced convection equipment and natural convection equipment are worked, for determine kinetic of drying. Finally, analyses of amount of cellulose and carbohydrates for dry peels banana will be determined, and determinate the industrial level will be given for the exploitation the industries. Analyses statistical and mathematical modeling will be worked through program MATLAB R2008a. (AU)
