Abstract

The importance of geographical origin determination is an increasing and pressing requirement for all foods. Honey is one of the largest studied foods due to its nutritional and medicinal properties in a correct diet. In this work it will be perform studies to sample preparation and chemical determination of mineral amounts and trace elements in samples of honey provide from different Brazilian regions. Sample preparation established protocols, with the use of cavity microwave digestion will be used. Moreover, the samples digestion efficiency with diluted acids will be also verify. After the sample preparation procedure established, the method will be applied in samples of honey provide by the productive system, involving plants, propolis and honeys of different Brazilian regions (Corumbá, Piauí, Belém, São Paulo, Paraná e Rondônia). The digests will be analyzed with the use of inductively coupled plasma mass spectrometry (ICP-MS) to minerals determination (K, P, Ca and Mg) and trace elements (Fe, Zn, Cu, Mn, Se, Al, As, Cd, Cr and Pb). The results will be use in a preliminary chemometric study with the objective of classify, characterize and distingue the samples origin based on the amount of determined elements. This proposition is part of a FAPESP thematic project (process n. 06/59083-9), that want to establish procedures to quantify inorganic elements in different matrix, focus on a new instrumentation developed to isobaric interference's decrease and consequent increase sensitivity.
