Abstract

Most oils and natural fats have limited aplication in their original forms due to certain regiospecific distribution tendencies of fatty acids. To expand their use, focusing the development of functional oils and fats, it is possible to modify this distribution through industrial processes, like the enzymatic acidolysis. Due to the specifity of some lipases, this reaction can esterify certain fatty acid to a specific position of the glycerol chain of a natural oil, resulting in a structured lipid with specific physicochemical characteristics and new therapeutical and nutritional proprieties. Structured lipids containing medium chain fatty acids in the sn-1,3 positions and a essential fatty acid in the sn-2 position in high concentrations have application as an ingredient in the formulation of infant formulas lipidic faction and enteral and parenteral solutions, among other products for patients with nutrient absorptions problems. This project proposes the incorporation of caprylic acid (CA), C8:0, as a quick source of energy, to the sn-1,3 positions of the glycerol chain of single cell oil rich in docosahexanoic acid (DHASCO) or araquidonic acid (ARASCO), both essential fatty acids. For that, mixtures of DHASCO or ARASCO with CA, in the free form, will be submitted to enzymatic acidolysis catalyzed with the lipases Lipozyme TL IM and Novozyme 435. Mixtures will be prepared varying the molar ratio of the components, in 1:1, 1:2, 1:3, 1:4 and 1:5 (DHASCO ou ARASCO:CA) to evaluate the influence of the molar concentration on the structured lipid production process efficiency for each one of the enzymes. The process yield will be measured through the caprylic acid incorporation percentual in the sn-1,3 position.(AU)
