Abstract

Functional foods have received attention due to their beneficial health effects, promoted by ingest them. In this context, we can highlight the dietary triglycerides, obtained by modification, primarily using lipase, of triglyceride molecule (TAG) oils and fats, in order to give nutraceutical properties to common oils. Thus, this study will be carried out to select the most appropriate lipase to catalyze the synthesis of dietary TAG, MLM type, by enzymatic acidolysis using grape seed oil, which is abundant in Brazil and has low commercial cost. It will be used lipases from the following microorganisms: Rhizopus oryzae, Aspergillus niger and Mucor javanicus, all specific for positions 1 and 3 of TAG. These enzymes will be immobilized on montmorillonite clay, using different methods (physical adsorption and covalent binding). The immobilized derivatives will be evaluated as hydrolytic and esterification activity in order to select biocatalysts which have potential application in the interest reaction (TAG synthesis of MLM type). The selected derivatives will be characterized as to kinetic properties and finally used in acidolysis reaction of grape seed oil in batch reactors. This project is part of the biotechnology field, generating important products for the food industry. In this context, its implementation will contribute to develop national technology of enzymatic processes for the synthesis of products with economic and social interest. (AU)
