Abstract

The work will be developed in Bariri - SP and the Faculty of Agrarian and Veterinary Science - FCAV / UNESP, Jaboticabal - SP. Will be used 80 animals (not castrated) of bovine (Nellore) and buffalo (Mediterranean and Murrah crossed). The animals will be finished in a feedlot in collective pens, according to the species receiving the finishing period, 11.98% crude protein and 24.68% total digestible nutrients, until the animals are 24 months. The slaughter will take place in a packing house following the slaughter of the same routine. After rigor mortis samples of the Longíssimus (between 12th and 13th ribs) the left carcass will be collected for the realization of physicochemical analyzes and the yield carcass in the right carcass. Will be conducted analyzes of color, pH, marbling, water holding capacity, cooking weight loss, shear force, oxidized lipids, collagen, sarcomere length, myofibrillar fragmentation index, fatty acid profile, nutrient composition, sensory analysis. The experimental design is randomized with two treatments (species) and 40 repetitions. The data will be submitted to ANOVA and means compared by Tukey's test at 5% significance level. For statistical analyzes will use the SAS Computer Program (2001). (AU)
