Effects of beta agonists and imunocastration on performance, carcass traits and meat quality of feedlot finished Nellore cattle

Abstract

This work will be carried out to evaluate the effect of using beta-adrenergic agonists in imunocastrated Nellore cattle on the performance, carcass traits and meat quality. Ninety six non-castrated Nellore males, with average initial weight of 300kg and 20 months old will be used. Twenty days before the beginning of the feedlot, the animals will be grouped according to the initial live weight and half of animals within each block will be vaccinated with an anti-GnRH vaccine, procedure that will be repeated 30 days later. Forty eight animals will be allotted in four collective pens equipped with electronic gates (Calan gates) and the rest will be allotted in individual pens. During the first 60 days of feeding, animals will be fed the same diet containing 85% of concentrate and 15% of roughage (corn silage). After this period, animals will be divided again in three subgroups and fed for 30 days one of three treatments: control diet (CON), or a diet containing 80mg/day of Zilpaterol hydrochloride (ZIL) or a diet containing 200mg day of Ractopamin hydrochloride (RAC). During the feedlot period, feed intake and carcass traits will be evaluated by ultrasound and after 93 or 101 days of feeding, animals will be slaughtered for evaluation of the following carcass traits: omental, kidney, pelvic and inguinal fat, carcass weight and carcass pH. Immediately after slaughter (15 min) a sample of Longissimus muscle will be taken to analyze genes expression related to calpain and calpastatin. After 24h chilling carcasses will be weighed and pH measured, then the left half carcass of each animal will be separated in retail cuts and the weight and percentages of retail cuts, fat trimmings and bone will be determined. Samples will be collected from the Longissimus muscle for evaluation of carcass traits related to meat quality like color, shear force, fatty acid composition and sensory traits. (AU)
