Abstract

Bee pollen is produced by Apis mellifera bees, collected by beekeepers at the entrance of the hive, processed and marketed. During its production, collection and processing can occur spoilage microorganisms contamination and even pathogenic, but given the slack of studies of microbiological quality and the variety of products found in the country, little is known about the microbiological quality of the national production. Studies suggests that bee pollen is a source of nutrients and bioactive compounds. Its composition is related to botanical origin, soil and climate conditions of the region where it is produced and the type of processing. The aim of this study is to determine the profile of phenolic compounds, microbiological quality and antimicrobial capacity of 70 samples of dehydrated bee pollen from Apis mellifera, collected in different Brazilian States, and also to correlate the phenolic profile with the antimicrobial capacity of the samples. Microbiological analyses will be performed (aerobic mesophilic, psychrophilic and yeast and molds counts, most probable number of total coliforms and Escherichia coli, spores of sulphite-reducing clostridia and presence or absence of Salmonella sp.), antimicrobial capacity against bacteria and yeasts for dilution assays, and identification and quantification of phenolic compounds by high performance liquid chromatography (HPLC) with coupled mass spectrometer. At the end of this study are expected to determine the sanitary quality of the samples, antimicrobial capacity, if there is variation between samples, and to establish a correlation between the antimicrobial capacity and phenolic compounds. Unpublished data will be generated that will assist in the monitoring of quality control, adding value to this product. (AU)
