Abstract

Saturated fatty acids in bovine meat are directly associated with increased blood cholesterol and may lead to the development of cardiovascular diseases. Thus, research studies aiming at the production of meat with beneficial characteristics to human health are increasingly relevant, given the role of this food as the main nutritional protein source. This project aims to evaluate and compare, by meta-analysis, the quality of meat from steers fed added fat sources and finished on pasture or in feedlots. And thus, compare and try to determine which finishing system provides the meat with best quality. A total of 313 animals will be used, referring to experiments already completed, or to be developed by the research group under the guidance of Prof. Telma T. Berchielli, from the Department of Animal Science, Universidade Estadual de São Paulo, located in Jaboticabal/SP, Brazil. The following meat-quality parameters will be evaluated: slaughter weight, hot and cold carcass yields, commercial cuts (special hindquarter, forequarter and spare rib) yield, loin-eye area, subcutaneous fat thickness, tenderness (shear force), thawing and cooking losses, sensory panel analysis, color and fatty acid profile of longissimus muscle, and subcutaneous fat of animals finished in feedlots or on pasture. Meta-analysis will be carried out by graphic examination (to observe biological consistency), correlation (to identify correlated variables) and variancecovariance analysis of the data using the GLM procedure. The analyses will be performed on the SAS software. (AU)
