Abstract

Biosurfactants are surfactants that have a biological origin. It is a group of structurally diverse molecules tensoactive, who usually have lower toxicity and greater biodegradability than the synthetic surfactants. The most extensively studied applications of biosurfactants are those related to the petroleum industry and the biorremediacao of locations or waste contaminated with hydrocarbons, although in recent years, has increased the interest in evaluating the potential usefulness of biosurfactants as additives in the areas of food, pharmaceutical, medical and veterinary (given that there are studies that demonstrate properties antibacterial, antifungal, antiviral, antitumor and even to combat the accession and formation of biofilms of pathogenic micro-organisms). Thus, the present project has as main objective the use of agro-industrial residues (whey and vinasse from sugar cane) as renewable sources for the biotechnological production of biosurfactants, employing the strain Lactococcus lactis CECT-4434 and subsequent evaluation of their properties as additives. The project will be developed in 2 stages, being the 1st step will be developed in Brazil (University of São Paulo) and the 2nd step in Spain (University de Vigo). Brief Overview of the activities that will be developed are: Brazil - Evaluate the influence of the whey and stillage to formulate culturemedia alternative and natural; studying the influence of alternative sources of carbon and nitrogen; assess, with the aid of a fractionated factorial planning the influence of relevant variables in the cultivations conducted in metabolic shaker; assess the kinetics of the process in metabolic shaker; evaluate, through an experimental planning DCCR (Central Composite Design Rotational), in bioreactor, the influence of the factors (agitation and aeration), expressed by volumetric coefficient of oxygen transfer (kLa); evaluate the kinetics of the process in bioreactor 3 liters; and recover, isolate and analyze the biosurfactants during the cultivations in metabolic shaker and in bioreactor of bench. Spain - Studies of physico-chemical characterisation of biosurfactants; stability of biosurfactants in extreme conditions of pH and temperature; assess the properties of biosurfactants as additives. For this reason, will be studied the antimicrobial capacity of biosurfactants face many pathogenic micro-organisms, the ability of biosurfactants to form emulsions and the inhibition of adhesion of pathogenic micro-organisms to solid surfaces when using biosurfactants.
