The influence of parents' cooking skills on the diet of school-age children

Abstract

Objective - To study the influence of parents' cooking skills on the quality of the diet consumed at home for school-age children. Method - Cross-sectional study (T1), followed by an experimental, prospective, randomized and controlled study involving an educational intervention to improve parents' cooking skills. The study population corresponds to child-parent pairs from nine from a network of private schools that provide integrated comprehensive services for students in São Paulo. The sample size was based on the minimum number of children required to evaluate the impact of the intervention: 240 in the intervention group and 240 in the control group. For the T1 five or six elementary age classes will be selected at random from each school (total initial n= ~ 1600 children). Interviews will be conducted by telephone by a trained team of interviewers, before intervention (T1), immediately after the intervention (T2) and six months after the intervention (T3). Data will be collected regarding: the children's food intake through the use of dietary recalls of the dinner of the day before the interview; parents' cooking skills; socioeconomic and demographic characteristics; frequency and characteristics of meals prepared at home; and how cooking skills were learned, using an instrument specially designed for this research. The parents' cooking skills will be described by scores. The children's diet quality will be evaluated by the total intake of calories, calorie distribution over food groups and subgroups, energy density of the meal, and nutrient content. The association between the parents' cooking skills and the children's diet quality will be analyzed using multiple linear regression analyses with and without adjustment for confounding factors. The impact of the intervention on the parents' cooking skills and the children's diet quality will be evaluated by comparisons between the intervention and control groups at times T1, T2 and T3.
