Abstract

The agro-industrial wastes of vegetal origin are considered a problem since the beginning of industrial processes, however they are becoming attractive as a source of biocatalysts and bioactive compounds, among which stand out the enzymes as lipases. These enzymes are capable to catalyze the hydrolysis of glycerides, as well as in synthesis reactions in low water conditions. However, there are many studies about its application in various areas; but their use is still limited, mainly due to the high cost of lipases currently. Thus, lipases from waste, such as waste from orange and mango processing, can help reduce the cost of production of these enzymes, allowing its use in the areas of bioremediation and biofuel production. For this, besides the bioprospecting for good sources of lipases, studies on obtaining, concentration, immobilization and application to maximize the maintenance of the activity and make possible its application in commercial scale, are needed.
