Abstract

The quality of beer and ingredients used in its production are and tend to be increasingly relevant, since the significant current consumption and there is an undeniable trend of growth. In this sense, it is necessary to highligh the aspects related to fungal contamination and /or mycotoxins and their impacts on the final product. Additionally, fungi secrete a protein called hydrophobin that has been studied for causing gushing, a phenomenon that constitutes excessive foaming in the opening of the bottle, compromising the beer quality, and therefore, the reputation of the brewery. Considering the aspects above, the present study aims to determine the presence of fungi and mycotoxins in malting barley grain in storage, as well as evaluate the instability of mycotoxins levels during the craft brewing process. In addition, the research has the ambition to assess fungal gushing factors associated with the phenomenon, as well as the potential for hydrophobins production.
