Abstract

Fungal and plant non-starch polysaccharides (NSP) can interact with immune system cells in human intestine, modulating the immunological response and promoting beneficial effects on macrophage function, which may reduce the risk of cardiovascular diseases and cancer. However, these effects are structure-dependent, which vary with the origin and the processing. In this context, preliminary studies showed that chayote (Sechium edule) and the fungus Pleurotus albidus may be sources of NSP with potential effects on macrophages. Thus, the present project aims to characterize, analyze the composition and evaluate the effects of NSP from raw and cooked chayote and from mycelia and fruiting bodies of Pleurotus albidus on macrophages function. The results may show how these sources of NSP can benefit health and also offer the prospect that their production and use will eventually be exploited in this regard.
