Abstract

The nano and micro-particles loaded iron have been developing, adding ora-pro-nobis extract into chitosan-pectin polyeletrolyte complex. The ora-pro-nobis is a non-conventional food plant that contains minerals such as iron and calcium. The formation process of the particles was evaluated by zeta potential and particles size at different charge ratios. The best conditions were defined and it was determined the yield of production. SEM-EDS micrographs will be used to identify the iron presence in the particles. The objective of this project is to develop a research step in collaboration of Leeds University evaluating the particles complexation with iron, stability in different medium, cytotoxicity (Caco-2 cells), incorporation efficiency (iron on particles) and iron absorption by Caco-2 cells. These complementary analyses are very important to the comprehension of the association mechanisms of iron with the particles. Furthermore, is important to assess the behaviour of the particles in simulated conditions (gastric and intestinal).
