Abstract

This project aims to study the consumption of dietary fiber in Brazil and its relation with the ingestion of ultraprocessed foods. This study is part of the thematic project "Consumption of ultra-processed foods, dietary nutrient profile and obesity in seven countries," and will involve data analysis from the 2008-2009 Household Budget Survey, in particular data on individual food consumption. Data on food consumption were obtained through two 24-hour food records answered by individuals aged 10 years or older (n = 34,003). Foods will be classified into groups according to the characteristics of industrial processing: (1) natural or minimally processed foods, (2) culinary ingredients, (3) processed foods and (4) ultra-processed foods. The food consumption pattern of the Brazilian population will be described based on the distribution of the total caloric content of the four food groups and their subgroups. The consumption of dietary fiber and its relation with the total calories of the diet will be described according to the 4 groups and their subgroups, as well as the fiber's density (g / kcal) in each one of them. Lastly, analysis will be carried out in order to verify the relationship between the consumption of ultraprocessed foods and dietary fiber. (AU)
