Abstract

The use of crop systems involving plant cells has been mainly explored in the production of high added value secondary metabolites as a sustainable alternative to the direct extraction of plant species or complex chemical processes of synthesis. Soy and its secondary metabolites present several biological and pharmacological activities described in the scientific literature, with emphasis on the antioxidant activity of their compounds. The aim of this project is to develop a methodology for the culture of G. max cells (soybeans) in suspension and to define the main operating parameters, laboratory scale to produce active compounds by means of plant cell culture with anti-oxidant potential And antitumor in a sustainable and ecologically correct way.
