Abstract

He thematic product quality is a subject discussed long ago, along with the attributes or dimensions that define it. Discussions around the issue turned to questions related to the standardization of attributes and the attendance of specifications as well as issues related to food safety. However, prior to mass production, there was interaction between those who produced and those who consumed, and the consumer's needs and expectations were met in relation to the quality of the food product. Nowadays, there is a resurgence of a greater demand for products derived from a model that contrasts the model on a global scale, where specific characteristics of product quality are emphasized, such as local production and consumption, rooting, connection between producer and consumer. The discussions on product quality in this new model of production and consumption (short agro-food chains) are recent and require a theoretical and practical deepening, given the new demands of consumers for these products and the need of the farmers, in their majority of family agriculture, to meet them. Therefore, the challenge of developing this research project is to identify the variables (or attributes) that make up the concept of product quality in consumer perception of products with certificates of local and social reputation. To do so, data analysis tools as well as exploratory factor analysis and confirmatory factor analysis will be used for data analysis. (AU)
