Abstract

The pilot kitchen is a department benefiting from the National School Meal Program where meals are prepared and then distributed to municipal schools. In addition to the nutritional aspects, hygienic-sanitary conditions are essential for the protection and promotion of student health, since the incidence of Foodborne Diseases has grown worldwide to be considered a worrying public health problem. Contamination by bacterial origin is one of the sources that contributes to the high incidence of food-borne diseases, and the intake of pre-formed staphylococcal enterotoxins in food is involved in the vast majority of cases. In addition, food handlers colonized by Staphylococcus producing superantigens and leukotoxins are subject to infections, such as skin. Thus, this work aims to identify Staphylococcus sp. isolated from professionals in a pilot kitchen, as well as molecular detection of the genes of classic staphylococcal enterotoxins, TSST-1 and Leucocidin Panton Valentine. Thus, samples of Staphylococcus isolated from the nasal cavities and nails of food handlers from three pilot kitchens will be analyzed. These bacterial isolates will be identified by biochemical and multiplex PCR assays. The classical enterotoxin genes A, B, C and D (seb, seb, sec and sed genes), tst and luk-PVL will be screened by the PCR technique. For the analysis of the obtained results the Test of X2 will be used. The level of significance for all tests will be set at p <0.05
