Abstract

Coffee is one of the most consumed and appreciated products in the world. Until now, moderate consumption of coffee by healthy individuals - 3 to 5 cups daily - is not contraindicated. However, the coffees from capsules may have an expressive amount of aluminium (Al) as a result of the breaking metal casing of the package during the extraction procedure, since it is performed at high pressure, e.g., up to 19 bar for homemade coffee machines. Aluminium has unknown role in human biology, however, there is evidence that excess of this element may be linked to acute and chronic diseases, including degenerative ones, such as Alzheimer's and Parkinson's. In this way, the evaluation of Al bioaccessibility from ingested drink coffee, after simulation of an in vitro gastrointestinal digestion, is then welcome to access the amount of Al that can be released from the sample matrix, and, then,to estimate a possible human intoxication.
